docs: rewrite the README for a public v1 #55

Problem

The README still says "Status: design phase. No code yet." v1 is built, and the repo is now public, so the README is the first thing a visitor sees and it makes the project look brand new.

It should cover: the current status, how to install and run it (build from source today, -demo mode, first-run onboarding), and screenshots of the demo mode.
